Description
The Tasty Easy Meatloaf blends 1 lb of ground beef with half a pound of breakfast sausage, which adds a spicy, savory element to the dish. Breadcrumbs and diced onion provide structure and mild sweetness, while the combination of salt, pepper, cumin, and garlic powder seasons the meat. The tomato sauce mixture includes cider vinegar, brown sugar, whole grain mustard, and Worcestershire sauce, creating a balanced glaze that imparts tangy and slightly sweet notes.
Formed into a loaf in an ovenproof pan and baked at 350°F for about an hour, the meatloaf is basted regularly with the glaze to keep it moist and develop a flavorful crust. Letting it rest after baking helps finish cooking and makes slicing easier. This meatloaf works well plated with mashed potatoes or vegetables as a filling comfort food main.
Ingredients
- 1 lb ground beef
- ½ lb breakfast sausage The kind you make into sausage patties for breakfast, hot
- 1 Cup breadcrumbs
- 1 onion small, diced
- 1 egg beaten
- 1 ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon cumin
- 1 teaspoon garlic powder
- 2 oz tomato sauce divided
- 3 Tbs cider vinegar
- 3 Tbs brown sugar packed
- 2 Tbs whole grain mustard good quality
- ½ cup water
- 2 Tbs Worcestershire sauce
Instructions
- Preheat oven to 350
- In a large bowl, Mix beef, sausage, bread crumbs, onion, egg, salt, pepper, cumin, garlic powder, ½ cup tomato sauce. Do not over mix or your meatloaf will become chewy. Simply use your fingers and mush it together and only do this until it is just mixed.
- Place in a shallow oven proof pan and form into a loaf. Stir together the remaining sauce, vinegar, sugar, mustard, water and Worcestershire
- Pour the sauce over the meatloaf and bake at 350 x 1 hour until cooked through. While cooking, spoon the sauce over the top of the meatloaf about every 20 minutes.
- Remove from the oven and spoon the sauce over the top a final time. Allow to rest for 10 minutes before serving.
