Ingredients

Servings

For the Sausage Gravy:

  • breakfast sausage 1 pound
  • all-purpose flour ¼ cup
  • whole milk 2 cups
  • salt to taste
  • black pepper to taste

For the Tater Tot Bowls:

  • tater tots frozen, 1 bag (32 oz
  • cheddar cheese shredded; 1 cup
  • egg 4 large
  • green onion chopped; ¼ cup
  • fresh parsley chopped, ¼ cup, for garnish
  • hot sauce optional, for serving

Instructions

Prepare the Tater Tots:

  1. Preheat the oven according to the tater tot package instructions. Spread the tater tots on a baking sheet and bake until crispy and golden brown, about 20-25 minutes.

Prepare the Sausage Gravy:

  1. While the tater tots are baking, cook the breakfast sausage in a large skillet over medium heat until browned and cooked through. Remove the sausage with a slotted spoon and set aside, leaving the grease in the skillet.
  2. Add the flour to the skillet and whisk for 1-2 minutes to create a roux.
  3. Gradually whisk in the milk, stirring constantly, until the mixture thickens into a gravy. Season with salt and pepper to taste.
  4. Return the cooked sausage to the skillet and mix well. Keep the gravy warm over low heat.

Prepare the Eggs:

  1. Cook the eggs to your preference (scrambled, fried, or poached).

Assemble the Breakfast Bowls:

  1. Divide the crispy tater tots among four bowls.
  2. Top each bowl with a generous scoop of sausage gravy
  3. Add the cooked eggs on top of the gravy.
  4. Sprinkle with shredded cheddar cheese and chopped green onions.
  5. Garnish with fresh parsley and add a dash of hot sauce, if desired.
