Tater Tot Breakfast Casserole
Description
The dish begins with browning breakfast sausage and cooking chopped bacon until crisp, both drained and layered in a prepared baking dish. Shredded cheddar cheese is added as the next layer. A whisked mixture of eggs, milk, green chiles, salt, and cracked black pepper is poured over, providing a creamy, spicy base.
Frozen tater tots are arranged in a single layer on top, baking together for 45 minutes until the egg custard sets and the tots crisp up. The contrast between soft, savory layers and the crispy tater tot topping is a defining characteristic. Chopped chives sprinkled before serving add a fresh note.
This casserole suits larger gatherings or meal prep and can be customized by adding sauteed onions and bell peppers cooked with the sausage for more vegetable flavor. Any similar frozen potato product can stand in for the tater tots without altering the dish significantly.
Ingredients
- 1 pound breakfast sausage
- 6 lices Bacon chopped
- 2 cups cheddar cheese shredded
- 8 large egg
- 1/2 cup milk
- 4 ounces diced green chiles
- 1 teaspoon salt

- 16 ounces tater tots frozen
- 1 tablespoon chives chopped
Instructions
- Preheat oven to 350 degrees. Spray a 9x13 baking dish with nonstick spray.
- Add the sausage to a skillet over medium heat and cook, stirring often to break up the sausage, until the sausage is cooked through. Drain the grease and spread the sausage in a single layer in the prepared pan.
- Add the bacon to the skillet and cook until crisp, stirring often. Remove with a slotted spoon and sprinkle over the sausage.
- Sprinkle the cheese over the top.
- Add the eggs, milk, chiles, salt, and pepper to a mixing bowl and whisk to combine. Pour over the casserole.
- Arrange the tater tots in a single layer over the egg mixture.
- Bake for 45 minutes or until eggs are set.
- Sprinkle with chives before serving.
Notes
- Finely diced onions and bell peppers can be cooked with sausage to add extra flavor.
- Frozen tater tots or similar potato products can be used interchangeably as the topping.
