Tater Tot Breakfast Casserole

This Tater Tot Breakfast Casserole layers cooked sausage, onions, bacon, and cheese beneath a creamy egg and milk mixture, topped with frozen tater tots for a crispy golden finish. Baking until set produces a hearty, savory casserole with a combination of textures from soft eggs to crunchy tots, ideal for brunch or a filling breakfast.

Description

The Tater Tot Breakfast Casserole begins with cooking bacon until crisp, then preparing a sausage and onion mixture in the same skillet, which builds a savory base. This mixture is placed in a greased 9x13 inch baking dish, topped with some cooked bacon pieces and shredded cheddar cheese. A whisked blend of eggs, milk, salt, pepper, and garlic powder is poured over the layered ingredients. The casserole is then topped with a layer of frozen tater tots.

Baked at 350 degrees Fahrenheit for 50-60 minutes, the casserole firms up with a set egg layer and crispy tots on top. Additional cheese and bacon are sprinkled over after initial baking and melted with a final short bake, adding richness and bacon flavor on top. The resulting dish offers a combination of creamy, cheesy, meaty, and crunchy textures, making it a satisfying morning meal.

This breakfast casserole works well for gatherings or meal prep and pairs easily with fresh fruit or toast. The dish serves multiple people and can be prepared ahead or frozen for convenience.

It can be assembled the night before and refrigerated overnight, with slightly extended baking time if cold. It is also freezer-friendly when well-wrapped, requiring thawing before baking and possibly longer cook times to ensure doneness.
