  • 1 lb breakfast sausage ground
  • 28 oz tater tots frozen
  • 1 1/2 cups cheddar cheese shredded
  • 8 egg large
  • 1 cup milk whole
  • 1/2 cup sour cream
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • green onions sliced, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, crumble and cook the ground breakfast sausage until it is browned and cooked through, about 5-7 minutes. Drain any excess fat and set the sausage aside.
  3. Spread the frozen tater tots evenly across the bottom of the prepared baking dish. Layer the cooked sausage over the tater tots. Sprinkle 1 1/2 cups of the shredded cheddar cheese over the sausage layer.
  4. In a large mixing bowl, whisk together the eggs, milk, sour cream, salt, pepper, and garlic powder until well combined.
  5. Pour the egg mixture evenly over the layers in the baking dish. Use a spatula to gently press down, ensuring the egg mixture covers all ingredients.
  6. Place the casserole in the preheated oven and bake for 40-45 minutes, or until the eggs are set and the top is golden brown.
  7. Remove from the oven and let it cool for a few minutes before slicing. Garnish with sliced green onions before serving. Enjoy!
