Tater Tot Breakfast Casserole
Description
Tater Tot Breakfast Casserole combines a base of tater tots with cooked bacon, onions, and red and green bell peppers, layered and covered with an egg and milk mixture seasoned with garlic powder, salt, and pepper. The casserole is chilled overnight to let the custard set before baking. Initially baked covered at 350°F to cook through, it is then uncovered and baked at 425°F to melt the cheese and crisp the top. The bacon fat is used to sauté the vegetables, enhancing flavor. This casserole offers a contrast between the crispy tater tots and the creamy egg mixture, complemented by smoky bacon and tender vegetables.
The casserole is best served warm, allowing the melted cheese and cooked bacon on top to add a rich finish. It suits a brunch or breakfast setting and can be easily portioned for multiple servings.
To ensure doneness, check the center with a knife; it should come out clean. Resting the casserole before cutting allows it to set further. Variations include substituting sausage for bacon and using different cheese blends. Precooked bacon or frozen vegetables can simplify preparation. The casserole can be refrigerated overnight prior to baking, and tater tots need no thawing before assembly.
Ingredients
- 20 ounces tater tots
- 1 pound Bacon or 1 pound sausage *see note
- 1 onion diced
- 1 red bell pepper diced
- 1 green bell pepper diced
- 6 egg
- ⅔ cup milk
- ½ teaspoon garlic powder
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- 3 cups Mexican cheese blend or shredded cheddar cheese, divided, shredded
Instructions
- Grease a 9x13 pan and place the tater tots in a single layer. Sprinkle 1 cup of cheese evenly over the tots.
- Chop the bacon into 1" pieces. Cook bacon pieces over medium heat in a 10-inch skillet until crisp, then transfer to a paper towel-lined plate. Leave 2 tablespoons of bacon fat in the skillet.
- Sauté onions in the skillet until softened, then add bell peppers and combine. Layer the onion and bell pepper mixture over the tater tots, followed by ⅔ of the cooked bacon.
- Whisk eggs, milk, garlic powder, salt, and pepper in a bowl. Pour over the tater tots. Cover the pan tightly with foil and refrigerate overnight.
- Preheat the oven to 350°F. Bake the covered casserole for 40 minutes.
- Remove the foil, top the casserole with the remaining cheese and bacon, and increase the oven temperature to 425°F. Bake for an additional 15-20 minutes or until set and cheese is browned. Rest 5 minutes before serving.
Notes
- Verify doneness by inserting a knife in the center; it should come out clean.
- Let the casserole rest a few minutes before slicing for easier serving.
- Cheeses can be varied; pepper jack combined with cheddar works well.
- Swap sausage for bacon if preferred, cooking it with onions and draining fat.
- Use precooked bacon or ham to save time.
- Frozen onions and peppers are acceptable substitutes for fresh.
- Pre-shredded cheese is suitable for this recipe.
- Use frozen tater tots directly, no need to thaw.
- Remove casserole from fridge up to one hour before baking to temper.
