Tater Tot Breakfast Casserole

Tater Tot Breakfast Casserole layers coarsely chopped crispy bacon, sautéed onions and bell peppers, shredded cheddar cheese, and tater tots topped with an egg and milk mixture that bakes into a hearty egg casserole. The casserole offers a mix of textures from crispy bacon and tots to a soft, set egg custard, with flavorful vegetables adding balance. It can serve as a filling breakfast or brunch dish and is easy to prepare ahead of time.

Description

This breakfast casserole begins by crisping bacon and then cooking onions and bell peppers in the rendered bacon fat to build flavor. Combining tater tots, shredded cheddar, bacon, and cooked vegetables evenly distributes taste and texture in the base layer. The eggs beaten with milk, salt, and pepper are poured over this mixture and baked until the center is set, creating a firm yet tender custard that holds the ingredients together.

After baking, an additional sprinkling of cheese is melted on top for a cheesy finish, and the reserved bacon along with sliced green onions are added as a garnish to provide crunch and fresh green notes. The casserole can be cut into portions and served hot for a satisfying breakfast meal.

The recipe allows assembling the dish the night before, refrigerated up to 8 hours before baking, which is convenient for busy mornings. There is no need to thaw the tater tots before baking, and if starting from a cold dish, adding a few extra minutes of baking helps ensure thorough cooking.

  • 1 pound Bacon coarsely chopped
  • 1/2 cup onion finely diced
  • 3/4 cup bell pepper chopped, can use red, green or both
  • 32 ounces tater tots
  • 2 cups cheddar cheese divided use, shredded
  • 12 egg
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

  6. Spread the tater tot mixture into the baking pan.
  7. In a large bowl whisk together the eggs, milk, salt and pepper until thoroughly combined.
  8. Pour the egg mixture over the tater tot mixture.
  9. Bake for 45 minutes or until center is set.
  10. Sprinkle the remaining cheese over the top. Bake for 5 minutes or until cheese is melted.
