Tater Tot Breakfast Casserole

The Tater Tot Breakfast Casserole layers cooked sausage and bacon with frozen tater tots and a cheesy egg custard, baked until golden and bubbly. The combination of seasonings with Monterey Jack and cheddar cheeses creates a creamy, savory dish that holds together well when sliced. Garnishing with green onions and remaining bacon crumbles provides contrast in texture and fresh flavor, making it a substantial breakfast or brunch option that can be prepared ahead and reheated.

Description

This casserole recipe begins with cooking and crumbling bacon and sausage, then layering frozen tater tots evenly in a greased baking dish. A mixture of eggs, milk, salt, and pepper is whisked together, then combined with half of the cooked bacon, sausage, and shredded cheeses including Monterey Jack and cheddar. This custard-like mixture is poured over the tater tots, and extra tots are added on top before baking. After an initial bake of 40-45 minutes, more shredded cheddar cheese is sprinkled on top and baked a few minutes longer to melt and brown slightly. Once cooled briefly, the casserole is topped with remaining bacon bits and sliced green onions.

The dish holds well for leftovers and can be frozen for up to three months if fully cooked and properly wrapped. Thawing before reheating ensures even warming. This casserole's layers provide a balance of crispy tater tots, creamy cheese, and savory meat, suitable for hearty breakfasts or casual gatherings where a make-ahead option is helpful.
