Tater Tot Casserole
Description
Tater Tot Casserole begins by browning lean ground beef seasoned with onion and garlic powders, salt, and pepper, then mixing it with Greek yogurt for creaminess. This base is spread into a deep casserole dish and topped with frozen corn and peas, followed by cheddar cheese and a layer of frozen tater tots. The topping of more cheddar cheese, crispy crumbled bacon, and crushed corn flakes creates a crunchy finish.
Baking at 400°F melts the cheese and crisps the tater tots and corn flakes, creating a combination of textures from creamy to crispy. Portions can be served hot as a satisfying main dish featuring layers of meat, vegetables, and cheese balanced by the starchy tater tots.
Using a deep dish casserole ensures that each substantial layer fits well and bakes evenly. For preparation ease, the ground beef and bacon can be cooked in advance. Leftovers store well in the fridge for up to 4 days. Crushing corn flakes just before topping preserves their crunch. Allowing the casserole to rest briefly after baking helps with slicing and serving.
