Tater Tot Casserole

Tater Tot Casserole brings together browned ground beef seasoned with garlic, Worcestershire sauce, and Italian herbs, combined with sour cream, cream of mushroom soup, corn, and cheddar cheese. Topped with crispy baked tater tots and melted cheese, this casserole offers a comforting combination of creamy and crunchy textures. It serves as a filling main dish suitable for family meals or casual gatherings.

Description

This Tater Tot Casserole starts with ground beef and chopped onions browned and flavored with garlic, Worcestershire sauce, and Italian seasoning. A creamy mixture follows with sour cream, condensed cream of mushroom soup, corn, and cheddar cheese, heated slightly to meld the flavors. The mixture forms the base layer, which is sprinkled with more cheddar cheese and then topped evenly with tater tots.

Baked uncovered at 375°F until the tater tots are golden and crispy and the cheese is hot and melted, the casserole combines rich, savory flavors with a satisfying crispy topping. The dish offers a contrast between the creamy filling and the crunchy exterior.

Opting for low-sodium ingredients helps manage saltiness, as the dish contains inherently salty components. Portioning varies based on appetite but generally serves 6-8 people. The recipe is also featured in the Salt & Lavender cookbook.

Ingredients

Servings
  • 1 pound ground beef lean
  • 1/2 medium onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon Italian seasoning
  • 1/2 cup sour cream
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (12 ounce) can corn drained
  • 2 cups cheddar cheese divided, shredded
  • 32 ounces tater tots see note, frozen
  • salt to taste
  • black pepper to taste
  • scallions for serving (optional, to taste, chopped

Instructions

  1. Preheat your oven to 375F and move the rack to the top third of the oven.
  2. Add the beef and onions to a skillet and cook over medium-high heat, stirring occasionally and breaking the beef up with your spoon, until it's browned and the onions have softened (about 7-8 minutes). If there's a lot of excess fat, spoon most of it out.
  3. Add the garlic, Worcestershire sauce, and Italian seasoning to the skillet and cook for about a minute.
  4. Reduce the heat to medium and stir in the sour cream, condensed soup, corn, and about a 1/2 cup of the cheddar. Stir well and let it heat through for a minute or two.
  5. Transfer the skillet mixture to a 9x13 casserole dish and smooth in an even layer. Optional: if you have a large oven-safe skillet, feel free to make the casserole entirely in the skillet.
  6. Sprinkle the casserole with the rest of the cheese, and then top it with the tater tots.
  7. Bake, uncovered, for 45 minutes or until the tater tots are nicely browned and the cheese is hot and bubbly. Serve with chopped scallions and salt & pepper if needed.

Notes

  • Use approximately 32 ounces of tater tots, adjusting slightly to fit your baking dish appropriately.
  • Choose low-sodium ingredients when possible to balance the total salt content.
  • This casserole typically serves between 6 and 8 people, depending on portion sizes.
