  • 1 taco seasoning packet
  • 1 diced fire roasted tomatoes petite, 15oz can
  • 1 black beans 15oz can
  • 1 cup corn kernels fresh or frozen
  • 1.5 cups cheddar cheese shredded
  • 4-6 cups tater tots frozen
  • salsa for topping
  • guacamole
  • sour cream
  • lettuce

Instructions

  1. Preheat oven to 350F. Brown ground beef in an oven safe skillet over medium heat.
  2. Pour in the taco seasoning, tomatoes, black beans and corn. Stir and simmer for 5 minutes.
  3. Remove from heat and top with shredded cheese. Arrange tater tots on top.
  4. Place in oven and bake at 350F for 20 minutes.
  5. Top with your favorite taco toppings.
