Ingredients
- 2 cups all-purpose flour
- ½ cup granulated sugar
- 1 pinch salt
- 1 teaspoon vanilla extract
- ¼ teaspoon almond extract
- 1 cup high-quality unsalted butter, room temperature
- 2 tablespoons coarse sugar

Instructions
- Preheat the oven to 350 degrees Fahrenheit and line an 8x8 baking dish with parchment paper, leaving a 1-inch overhang on two sides for easy removal. Set aside.
- Add 2 cups all-purpose flour, ½ cup granulated sugar, and 1 pinch salt to a large bowl and whisk to combine. Add 1 teaspoon vanilla extract ¼ teaspoon almond extract, and 1 cup high-quality unsalted butter, and cut in with a pastry cutter until the mixture resembles coarse breadcrumbs.
- Press the dough into the prepared pan. Sprinkle 2 tablespoons coarse sugar over the top and gently press into the dough before chilling for 20-30 minutes.
- Bake for 30-35 minutes, until the top begins to turn golden brown. Let the shortbread rest out of the oven for 5-10 minutes before carefully lifting it out of the pan and cut into 12 pieces, or however many you would like. I cut them to the size I needed to fit in my biscuit box.
- Let cool completely before serving.
