This recipe for Teddy Bear Sandwich Buns involves kneading a dough composed of bread flour, salt, sugar, instant yeast, butter, egg, and milk until soft and elastic. After proofing, the dough is divided into larger balls for the bun body and smaller ones to create ears attached with water as glue.

Once assembled on a parchment-lined pan, the buns rest before baking, producing soft rolls with a slightly shiny crust thanks to the egg wash. The dough’s formulation ensures a tender yet sturdy texture suitable for slicing into sandwiches.

The decorated buns use thin white cheese slices and mayonnaise to form facial features, with black gel food coloring to add detail, making these buns ideal for themed meals or parties.

For Buns

  • 4 1/2 cups bread flour
  • 2 teaspoons salt
  • 1/4 cup sugar
  • 1 packet instant yeast
  • 1 egg lightly beaten
  • 1/4 cup butter room temperature
  • 1 1/2 cup milk room temperature

Egg Wash

  • 1 egg lightly beaten

For Decoration

  • 2-3 lices white cheese
  • 1 tablespoon mayonnaise
  • black gel food coloring

Instructions

  1. In the bowl of the mixer add the flour, yeast, salt, and sugar. Mix until combined
  2. Add the egg and the butter while the mixer is running on medium-low
  3. Slowly add the milk 
  4. Using the dough hook, mix on medium speed for 5-6 minutes or until dough becomes soft and elastic. You'll know the dough is ready when it cleans the sides of the bowl. You can also knead the dough manually on the kitchen counter
  5. Remove dough from the mixer and place on a large bowl that's been greased with nonstick spray. Sprinkle some flour on top. Cover the bowl with a clean kitchen towel and proof in a warm area for 60 minutes
  6. Place dough on kitchen counter and divide into 10 portions weighing 4 oz each (approx.) Divide the leftover dough into 10 mini balls (for the ears)
  7. Roll each portion into a ball and place on a sheet pan lined with parchment paper 
  8. Divide the mini balls in 2 and use a little water to "glue" the ears on each bun
  9. Cover and let it rest for 30 minutes
  10. Preheat oven at 400 degrees F
  11. Brush the buns with the egg wash 
  12. Bake for 13-15 minutes or until browned 
  13. Remove from oven and place on a cooling rack 

For Decoration

  1. Using a small round cookie cutter, cut small cheese circles. Use mayo as glue to stick to the bear
  2. Mix the mayo and coloring until desired color is achieved. Place mixture on a piping bag fitted with a small round tip. Pipe the dots for the eyes, the nose and mouth
  3. Slice the bun in 2 and fill with your favorite sandwich ingredients 

Notes

  • Buns freeze well for up to 3 months when individually wrapped and stored in a sealed bag.
  • To thaw, unwrap and microwave on the defrost setting for 1-2 minutes.
