Teff Porridge

Teff Porridge combines whole grain teff with almond milk, water, and warm spices like cinnamon, cardamom, and allspice to create a creamy, mildly spiced breakfast. Cooking the teff slowly until tender results in a soft-grain texture that holds well without becoming mushy. The optional coconut sugar adds gentle sweetness, and the porridge can be finished with additional toppings to suit individual taste.

Description

This Teff Porridge uses whole grain teff cooked with almond milk and water for a nourishing hot cereal. The mixture includes aromatic spices—ground cinnamon, cardamom, and allspice—which infuse the porridge with subtle warmth and complexity. Salt balances the flavors, and optional coconut sugar or maple syrup adds sweetness to taste after cooking.

The porridge is brought to a boil with liquids and spices, then simmered for about 15 to 18 minutes until the teff grains are tender and the liquid is absorbed. Stirring occasionally prevents sticking and burning. The resulting texture is creamy with grains that remain distinct, making it hearty and satisfying.

Teff porridge can be portioned and served warm with a variety of toppings such as nuts, seeds, fruit, or yogurt. The milder flavor and slightly nutty taste of teff make it a versatile base for breakfast.

To deepen flavor, the recipe suggests optionally toasting the dry teff grains in the pan for a few minutes before adding liquids. Using whole grain teff rather than flour ensures the right texture. If the porridge thickens too much during cooking, additional liquid can be added to adjust consistency.
