Tempura Udon 天麩羅うどん

Simple and delicious authentic Japanese Udon noodle soup with Tempura Shrimp. If you can access ready-made udon noodle packet, Tempura shrimp, and dashi, this delicious Japanese noodle can be cooked under 15 minutes. However, you can make all of them from scratch. It takes time, but the Tempura udon is truly worth your effort because it will be more delicious.

Udon Soup

  • 1 cups dashi *1
  • 1 tbsp soy sauce *2
  • 1 tbsp mirin *3

Udon & Toppings

  • 1 packets Pre made Udon Noodle *4
  • 2 tempura shrimp *5
  • 2 slices Naruto fish cake *6
  • 1 tbsp Chopped shallots to garnish
  • shichimi togarashi optional garnish

Instructions

Udon Soup

  1. Heat Dashi in a saucepan over medium heat and add soy sauce and mirin.
  2. Bring to boil and turn the heat off and set the soup aside.

Udon Noodle

  1. Boil enough water (not listed in the ingredients list) in a large pot and add the Udon noodles. Cook according to packet's instructions becasue this varies depending on whether you use dry or frozen. *7
  2. Drain the cooked udon noodles and serve into the two bowls.
  3. Pour the Udon soup over the udon.
  4. Top with 2 Tempura shrimps and 2 slices of Naruto fish cake.
  5. Garnish with chopped shallots and sprinkle a little bit of shichimi togarashi if you like a little bit of spice.

Notes

  • *1 To make Dashi from scratch, read about Dashi here. I recommend using Niboshi Dashi. If you can access the instant Udon noodle soup packets, empty the packets into a noodle bowl and pour 1 cup of hot water to make Udon soup. 
  • *2 If you don't have soy sauce, it can be substituted with coconut aminos. Read more about  other options of Japanese food substitutions
  • *3 If you don't have mirin, substitute with 1tbsp dry sherry + 1tsp sugar. 
  • *4 One pre-made store-bought Udon noodle packet generally weighs about 4 oz (120 g). You can replace this by 3 oz (90 g) dry Udon noodle.  Also, this can be replaced with Soba Noodles too. 
  • *5 See how to make Tempura Shrimp here. Cooking time of Tempura shrimp is not included in the cooking time. 
  • *6 Fish cake is optional if you can not find fish cakes you can add crab sticks or whatever is available. 
  • *7 Usually premade Udon packet and frozen Udon noodles require about 1 minute to cook.
