Tender Pork Chops with Caramelized Apples and Onions

Tender Pork Chops with Caramelized Apples and Onions are slowly baked over onions and apple slices with brown sugar, producing a sweet and savory combination. The pork chops become very tender after baking covered for three hours, absorbing the flavors of the fruit and onions beneath them.

Description

This recipe places pork loin chops on a bed of thinly sliced yellow onions and peeled Granny Smith apples, sprinkled with brown sugar, and seasoned simply with salt and pepper. Baking the covered dish at a low temperature for three hours creates a moist environment where the pork slowly cooks to tenderness while the apples and onions caramelize, sweetening naturally.

The interplay of savory pork with the sweet, mellow apple and onion mixture offers a balance of flavors with a soft texture throughout. This slow-cooking method requires no stirring or uncovering, preserving moisture and melding flavors effectively.

Served with Parmesan smashed potatoes, it forms a complete meal combining richness, sweetness, and umami.

Ingredients

Servings
  • 4 pork loin chops at least 1/2-inch thick, bone-in
  • 2-3 medium apple peeled and sliced about 1/4-inch thick, Granny Smith variety
  • 1-2 medium onion sliced, yellow
  • cup brown sugar
  • salt Kosher salt and freshly ground
  • black pepper Kosher salt and freshly ground

Instructions

  1. Preheat the oven to 325 degrees. Lightly grease a 9×13-inch baking dish. Place the onion slices in an even layer over the bottom of the dish. Top the onion slices with the apples. Sprinkle the brown sugar evenly over the apples and onions. Season the pork chops generously on both sides with salt and pepper. Arrange the pork chops in a single layer on top of the apples and onions.
  2. Cover the dish tightly with foil and bake in the preheated oven for three hours. Do not open the oven and lift the foil – the pork chops, apples and onions need to be tightly covered the whole time to work their magic (and not dry out).
  3. Serve each pork chop with Parmesan smashed potatoes and topped with the apples and onions.
