Tequila Chicken Wings
Description
Tequila Chicken Wings combines well-seasoned baked wings with a vibrant sauce featuring tequila and fresh lime. The wings are coated with salt, garlic powder, black pepper, and chili powder, then baked at 425°F until fully cooked and nicely crisped. Meanwhile, the sauce is simmered to cook off the tequila's sharpness and to thicken with cornstarch, developing a balanced sweet and spicy flavor from honey, cumin, and chili powder alongside the bright citrus of lime juice and zest.
Once baked, the wings are tossed in the thickened tequila-lime sauce, which clings to the crispy skin, imparting a lively, citrusy kick balanced by earthy cumin and a gentle heat. This cooking method maintains the wings' juicy interior while producing a sticky, flavorful coating. These wings pair well with simple sides like rice or a fresh salad to complement their zesty profile.
Allowing the sauce to simmer properly is key to mellowing the alcohol and achieving the right consistency so it coats the wings evenly without being runny. Optional adjustments include adding extra lime juice for more brightness or swapping the seasoning with chili lime seasoning for a different flavor twist.
Ingredients
- 1 pound chicken wings
- 1 teaspoon kosher salt or sea salt, coarse
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper ground
- 1/2 teaspoon chili powder up to 1 tsp
Sauce
- 1/3 cup tequila
- 3 lime juice and zest
- 2 tablespoons honey
- 1 tsp cumin ground
- 1 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 teaspoon cornstarch
Instructions
- Preheat the oven to 425°F.
- Add the wings, salt, garlic powder, ground black pepper, and chili powder to a mixing bowl.
- Mix to coat all of the wings in the seasonings.
- Place the wings on a parchment-lined baking sheet, leaving a little space between them.
- Bake for 35 minutes or until the internal temperature reaches 165°F.
- While the wings are cooking, add all of the sauce ingredients to a sauce pan. Cook over medium heat, whisking frequently so that the cornstarch is smooth and incorporated.
- Let the sauce simmer for about 10 minutes, letting the tequila cook down and the sauce to thicken.
- Once the wings are cooked completely, add them to a clean mixing bowl.
- Pour the sauce over the wings and toss to coat. Serve and enjoy!
Notes
- Simmer the sauce long enough to fully cook off the tequila and thicken properly.
- Adjust lime juice in the sauce to taste for added brightness if desired.
- Chili lime seasoning can be used as an alternative to the wing seasoning blend.
