Teriyaki Beef Zoodles

This beef teriyaki zoodles is a delicious, healthy meal with tender beef and homemade teriyaki sauce.

Servings

For the sauce:

  • ¼ cup soy sauce gluten free tamari or coconut aminos for a paleo version, low-sodium
  • 2 tablespoons honey or your choice of low calorie sweetener with amount adjusted according to your preference, or coconut sugar
  • 3 tablespoons rice vinegar
  • 2 garlic minced, cloves
  • ½ teaspoon ginger grated or paste
  • 1 tablespoon corn starch or tapioca starch or arrowroot powder for a paleo version

For the zoodles:

  • 8 ounces flank steak sliced against the grain into ¼-inch thick slices
  • 1 teaspoon sesame oil
  • salt to taste
  • black pepper to taste
  • 4 zucchini cut into noodles using a spiralizer or a vegetable peeler (blotting with a paper towel helps to absorb excess moisture, medium

Instructions

  1. In a medium bowl, combine all the ingredients for the sauce.
  2. Place steak in marinade and for about 20-30 minutes (or longer for more flavorful)
  3. Spiralize the zucchini into noodles using a spiralizer or a vegetable peeler.
  4. Heat 1 tablespoon of sesame oil in a large skillet on medium high heat.
  5. Using tongs, add beef (but not the liquid) to the skillet
  6. Sear and brown for about 3 minutes, tossing often.
  7. Transfer beef onto a plate.
  8. Add the zucchini noodles to the pan.
  9. Cook for 2-3 minutes until zucchini is just tender. Be careful not to overcook.
  10. Stir in the beef and remaining sauce and turn cook on medium high and allow sauce to thicken.
  11. Serve immediately and garnish with green onions, if desired.
  12. ENJOY!!
  13. Store in the refrigerator for up to four days.
