Teriyaki Meatballs

Teriyaki Meatballs are savory ground beef balls baked then simmered in a glossy teriyaki sauce made with soy sauce, ginger, and brown sugar. The mix of breadcrumbs, garlic, and onion binds the meat and adds flavor. Simmering the meatballs in the thickened sauce allows them to soak up the sweet and tangy glaze. Garnished with sesame seeds and sliced scallions, they offer a pleasing balance of textures and a rich umami taste.

Description

This recipe combines ground beef with beaten egg, plain dry breadcrumbs, finely minced garlic and onion, and kosher salt to form the meatball mixture. Shaped into 1 ¾ inch balls and baked at 350°F, they cook evenly and firm up without drying out.

While the meatballs bake, the teriyaki sauce is prepared by simmering light brown sugar, ketchup, white vinegar, soy sauce, ground ginger, and water. Cornstarch slurry is added to thicken the sauce until glossy and deep brown. The baked meatballs are then added to the simmering sauce and cooked low and slow for 25 minutes to absorb flavor and maintain tenderness.

Once finished, the meatballs are ready to serve garnished with sesame seeds and sliced scallions. They pair nicely as an appetizer, main dish with rice, or as part of a party platter.

Meatballs:

  • 1 pound ground beef 80/20
  • 1 egg lightly beaten
  • ¼ cup bread crumbs plain, dry
  • 1 clove garlic finely minced
  • 1/3 cup onion white, finely minced
  • ½ teaspoon kosher salt
  • 1 1/2 cups teriyaki sauce

Garnish:

  • sesame seeds
  • scallions sliced

Instructions

  1. Preheat the oven to 350°F and coat a 9×13 baking dish with cooking spray.
  2. In a medium mixing bowl, break the ground beef into small pieces. Toss with the beaten egg, plain bread crumbs, minced garlic and onion and Kosher salt.
  3. Roll the ground beef mixture into 1 ¾ inch balls, placing into prepared baking pan. You should have about 20 meatballs.
  4. Bake the meatballs for 20 minutes. Remove.
  5. In a medium saucepan over medium heat, combine the light brown sugar, ketchup, white vinegar, soy sauce, ground ginger and 1 1/4 cup water, whisking until smooth. Bring to a low simmer.
  6. Meanwhile, whisk together the cornstarch and remaining ¼ cup water until smooth. Whisk into the sauce and continue to simmer until sauce thickens, becomes a deep brown and is glossy. Simmer on low for 3-4 minutes to reduce slightly.
  7. Add the meatballs, draining and discarding from any excess fats and liquids in the pan.
  8. Simmer on low heat with meatballs for 25 minutes, stirring every 5 minutes.
  9. Garnish with the sesame seeds and scallions.
