Teriyaki Pineapple Grilled Shrimp Skewers
Description
The shrimp are first marinated with smoked paprika, cayenne pepper, optional ground cumin, olive oil, brown sugar, lime juice, salt, and black pepper. This blend imparts smoky, slightly spicy, and tangy notes. After marination, pineapple cut into cubes is skewered alternately with shrimp on soaked bamboo or metal skewers to prevent burning or slipping off. The skewers are grilled over medium heat for 5-7 minutes, turning once, while basting with teriyaki sauce to add sweet soy glaze and moisture.
The result is a combination of juicy shrimp with a light crust and caramelized pineapple pieces. Fresh coriander leaves and lemon wedges garnish add herbaceous brightness and citrus notes. These skewers pair well with rice or couscous and can be used in tacos, sandwiches, or salads for versatility in meals.
Jumbo shrimp with tails left on are recommended for ease of handling and presentation, but smaller shrimp can be used by skewering with two sticks. Fresh shrimp provide the best texture and flavor, while fully thawed frozen shrimp are also suitable if dried before use. Cumin is optional and can be omitted to suit taste preferences.
