Teriyaki Sauce
Description
The Teriyaki Sauce recipe blends soy sauce with water or fruit juice, fresh minced garlic and ginger, and brown sugar, then simmers to meld the flavors. A slurry of cold water and cornstarch is whisked in during a low boil to thicken the sauce to a glaze-like consistency. The sauce balances sweet, salty, and umami notes with aromatic garlic and ginger.
This sauce is ideal for marinating or topping grilled meats, stir-fried vegetables, or rice bowls. The inclusion of juice adds a layer of mild acidity and fruitiness, differentiating it from simpler soy-based sauces.
Store leftovers in an airtight container in the refrigerator for up to two weeks. Use fresh garlic and ginger for best flavor. Avoid low sodium soy sauce as it may diminish the salty depth needed here.
Ingredients
- ⅓ cup soy sauce
- ½ cup water
- ½ cup orange juice or pineapple juice or additional water
- 2 cloves garlic minced
- 1 teaspoon ginger fresh, minced
- 3 tablespoons brown sugar
Slurry
- 2 tablespoons water cold
- 2 tablespoons cornstarch
Instructions
- In a small saucepan, combine soy sauce, 1 cup of water and/or juice, garlic, ginger, and brown sugar.
- Turn the heat to medium and simmer the mixture while whisking for 2 minutes until the brown sugar has dissolved.
- To thicken the sauce, in a separate small bowl, combine water and cornstarch to create a slurry.
- While the sauce is at a low boil, slowly whisk in the slurry a little at a time until it reaches the desired consistency.
Notes
- Use fresh garlic and ginger for the richest flavor in the sauce.
- Store leftover sauce in an airtight container in the fridge for up to two weeks.
- If not using juice, add a teaspoon of rice or apple cider vinegar to maintain brightness in the sauce.
- Low sodium soy sauce is not recommended because it can weaken the flavor balance.
