Pasta Salad

  • 8 ounces bowtie pasta cooked and drained, noodles
  • 4 cups baby spinach leaves
  • 2 cups chicken cooked and chopped, boneless skinless
  • ½ cup craisins
  • ½ cup cashews or peanuts, honey roasted
  • 4 ounces mandarin orange drained
  • cup cilantro chopped, fresh
  • ¼ cup green onion chopped
  • 1 teaspoon white sesame seeds
  • 1 teaspoon black sesame seeds

Teriyaki Dressing

  • cup vegetable oil or canola oil
  • cup teriyaki sauce I like Yoshida
  • cup rice vinegar
  • ¼ cup granulated sugar
  • 1 teaspoon garlic minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

Make the Dressing

  1. To a medium bowl, add ⅓ cup vegetable or canola oil, ⅓ cup teriyaki sauce, ⅓ cup rice vinegar, ¼ cup granulated sugar, 1 teaspoon garlic, ¼ teaspoon salt and ¼ teaspoon black pepper.
  2. Whisk to combine and set aside.

Pasta Salad

  1. Cook the 8 ounces bowtie pasta noodles, to al dente according to package instructions. Drain the pasta in a strainer, then run it under cold water to cool the pasta.
  2. To a large bowl, add the pasta, 4 cups baby spinach leaves, 2 cups boneless skinless chicken, cooked, ½ cup craisins, ½ cup honey roasted cashews, 4 ounces mandarin oranges, ⅓ cup fresh cilantro, ¼ cup green onions, 1 teaspoon white sesame seeds, and 1 teaspoon black sesame seeds.
  3. Pour the dressing over the salad ingredients and toss to coat evenly.
  4. Serve right away or refrigerate the salad for up to 2 hours before serving.
