Tex Mex Slow Cooker Breakfast

Tex Mex Slow Cooker Breakfast is a layered egg casserole cooked slowly with sausage, onions, hash browns, and bell peppers seasoned with taco seasoning. The mixture of eggs and cheddar cheese binds the casserole, which is cooked until set. Topped with green onions and optionally cilantro, it offers a hearty and flavorful start to the day.

Description

This breakfast casserole begins by browning ground pork sausage and onions, then combining eggs, milk, taco seasoning, and cheddar cheese. In a slow cooker sprayed with cooking spray, hash browns form the base, topped with the cooked sausage, diced bell peppers, and optionally chopped cilantro. The egg mixture is poured over and cooked for 2.5 hours on high or 4 to 4.5 hours on low until the eggs are fully set.

The dish features a combination of Mexican-inspired spices with the creamy texture of the eggs and melted cheese. The bell peppers add sweetness and texture contrasting with the savory sausage and tender hash browns. It is a hands-off morning meal suitable for feeding a group.

Garnished with sliced green onions and optionally served with salsa and sour cream, this slow cooker casserole can be a convenient choice for weekends or brunch gatherings.
