Texas Caviar

Texas Caviar is a fresh, colorful salad made with black-eyed peas, tomatoes, onions, bell peppers, jalapeños, and cilantro, all tossed with lime juice and olive oil. With a mix of crisp vegetables and tender legumes, it provides bright, tangy, and mildly spicy flavors. Served chilled, it works well as a dip with tortilla or corn chips or as a side salad for barbecues and casual meals.

Description

This Texas Caviar recipe combines rinsed and drained canned black-eyed peas with diced plum tomatoes, finely chopped white and green onions, green bell pepper, jalapeños, and fresh cilantro. The salad is seasoned with salt, black pepper, lime juice, and olive oil, creating a refreshing balance of flavors. Jalapeños contribute mild heat, which can be adjusted to taste or omitted for less spice.

The mixture is tossed to blend flavors and refrigerated for several hours allowing the ingredients to meld and the sharpness of onions and peppers to mellow. The dish features crisp texture from fresh vegetables contrasting with the creamy black-eyed peas.

Texas Caviar is traditionally served chilled, accompanied by tortilla or corn chips for scooping. It can also be used as a topping for grilled meats or in sandwiches, making it versatile for gatherings or casual meals.

If using dried black-eyed peas, soak overnight and simmer until tender before adding; the recipe can be stored covered in the refrigerator up to three days but isn't suitable for freezing.

  • 3 plum tomatoes diced
  • 1 white onion finely diced, medium
  • 3 green onions finely chopped
  • ¼ cup green bell pepper finely diced
  • 2 jalapeños finely diced
  • ¼ cup cilantro finely chopped, fresh
  • ½ teaspoon salt
  • ¼ teaspoon black pepper ground
  • lime juice juice of 2 limes
  • 2 tablespoons olive oil
  • tortilla chips for serving, or corn chips

Instructions

  1. Place all ingredients (except chips) in a large bowl.
  2. Toss until thoroughly combined.
  3. Cover and refrigerate for several hours to allow the flavors to blend.
  4. Serve with tortilla or corn chips.

Notes

  • Use dried black-eyed peas soaked overnight and cooked until tender if you prefer to avoid canned; then cool before mixing.
  • Adjust jalapeño quantity to control spiciness, or substitute with milder or hotter peppers according to preference.
  • Keep the salad tightly covered in the refrigerator for up to three days for best freshness.
  • Freezing is not recommended as it may alter texture and flavor negatively.
