Ingredients
- 29 ounces black-eyed peas rinsed and well drained, canned
- 3 plum tomatoes diced
- 1 white onion finely diced, medium
- 3 green onions finely chopped
- ¼ cup green bell pepper finely diced
- 2 jalapeños finely diced
- ¼ cup cilantro finely chopped, fresh
- ½ teaspoon salt
- ¼ teaspoon black pepper ground
- lime juice juice of 2 limes
- 2 tablespoons olive oil
- tortilla chips for serving, or corn chips
Instructions
- Place all ingredients (except chips) in a large bowl.
- Toss until thoroughly combined.
- Cover and refrigerate for several hours to allow the flavors to blend.
- Serve with tortilla or corn chips.
Notes
- Use dried black-eyed peas soaked overnight and cooked until tender if you prefer to avoid canned; then cool before mixing.
