Texas Caviar
Description
Texas Caviar features a vibrant combination of fresh and pantry ingredients—tomatoes and avocado are mixed with black beans and black-eyed peas, while corn adds sweetness and bite. Bell pepper, jalapeño, red onion, and cilantro provide varied textures and a mild heat. The dressing is a simple emulsion of olive oil, red wine vinegar, lime juice, sugar, salt, pepper, and garlic powder, which ties all components together with a tangy brightness.
Once combined, the salad benefits from refrigeration for about an hour to allow the beans and vegetables to absorb the dressing, resulting in a more cohesive flavor profile. It makes a flavorful, colorful side or appetizer often scooped with tortilla chips, contributing a range of tastes from creamy to crisp with a hint of spice.
The recipe notes mention that the calorie count excludes chips, emphasizing their role as an accompaniment rather than a component of the salad itself.
Ingredients
- 3 Roma tomato seeds removed and diced
- 2 avocado diced, ripe
- 1 oz black beans rinsed and drained, canned
- 1 oz black-eyed peas rinsed and drained, canned
- 1 ½ cups sweet corn I just usually toss it in the salad frozen unless I plan on eating it immediately, it thaws quite quickly, frozen, thawed
- 1 bell pepper diced, I used half a green and half a red, but color doesn’t matter
- ⅓ cup red onion diced
- 1 jalapeno pepper seeds removed and diced into very small pieces
- ⅓ cup cilantro finely chopped
DRESSING
- ⅓ cup olive oil
- 2 Tablespoons red wine vinegar
- 2 Tablespoons lime juice fresh-squeezed preferred
- 1 teaspoon sugar
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon garlic powder
- tortilla chips for serving
Instructions
- Combine tomatoes, avocado, onion, black beans, black eyed peas, corn, pepper, jalapeno pepper, and cilantro in a large bowl. Toss/stir well so that ingredients are well-combined.
- In a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.
- Pour dressing over other ingredients and stir/toss very well.
- Keep refrigerated. For best results refrigerate (covered) for one hour before serving so that the beans and other ingredients can soak in the dressing. Make sure to stir well before serving.
