Texas Caviar (Cowboy Caviar)

Texas Caviar blends black-eyed peas and black beans with fresh vegetables like corn, onions, bell pepper, jalapeño, and tomatoes in a tangy lime and olive oil dressing. The mixture is spiced with cumin, garlic, and cilantro to create a vibrant, marinated salsa-like salad that delivers a fresh, slightly spicy taste and varied texture from the crunchy vegetables and tender beans.

Description

Texas Caviar, also known as Cowboy Caviar, is a colorful bean salad combining black-eyed peas and black beans with diced corn, onion, bell pepper, jalapeño, green onions, cherry tomatoes, and cilantro. The dressing is prepared by blending olive oil, lime juice, garlic, salt, pepper, and ground cumin to create a zesty marinade that is tossed with the vegetables and beans. The garlic is processed until smooth, allowing it to meld thoroughly with the citrus and spices.

The salad benefits from resting for at least an hour, which allows the flavors to marry and the ingredients to soak up the dressing. This results in a dish with fresh crunch from the vegetables complemented by tender beans and a lively, citrusy-spiced flavor profile. It's a versatile side that can accompany grilled meats, tacos, or tortilla chips.
