This amazing Texas Caviar Dip recipe is the perfect appetizer that's easy to make and delicious. Is it also vegan, gluten free & healthy. Better than salsa!

Ingredients
- 1 can black beans
- 1 can black eyed peas
- 1 cup corn
- 1/2 English cucumber peeled and diced
- 1/4 cup red onion finely diced
- 1 jalapeno, seeded and minced optional
- 1 cup diced tomatoes
- 2 green onions chopped
- 1 garlic clove minced
- Juice of 1 lime
- 1/4 cup cilantro minced
- 2 tablespoons apple cider vinegar or red wine vinegar
- 2 tablespoons olive oil
- Salt + Pepper, to taste
Add to Shopping List
Instructions
- Add all the ingredients in a large bowl and toss to combine
- Cover and refrigerate for at least 2 hours. Stir once again after an hour.Enjoy
