Description

The recipe recreates the iconic Rattlesnake Bites by mixing shredded Monterey Jack cheese with minced jalapeños and garlic. The mixture is formed into small balls about three-quarters of an inch in diameter and frozen for at least an hour to stiffen them, which helps maintain shape during frying.

Before frying, the balls are successively coated in flour, an egg and milk wash, and a breadcrumb mixture seasoned with paprika, garlic powder, and cayenne pepper. Deep frying in hot oil at 350 degrees Fahrenheit creates a crunchy, golden crust that encases the melted, spicy cheese filling.

  • 2 cups Monterey jack cheese , shredded
  • 2 jalapeños , minced
  • 1 clove garlic , minced
  • 1 cup  flour
  • 1 large egg , beaten
  • 1 cup milk whole
  • 1 1/2 cups bread crumbs plain
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • canola oil for frying, or vegetable oil

Instructions

  1. Combine your shredded cheese, minced garlic, and jalapenos in a bowl and mix.
  2. Shape cheese mixture into about 3/4 inch balls, squeezing tightly to compress.
  3. Place the balls on cookie sheet and freeze for about 60 minutes minimum but for 2 hours is preferred.
  4. Preheat your deep fryer to 350 degrees.
  5. Place the flour in a bowl.
  6. Mix the egg and milk together in a second bowl.
  7. Mix the bread crumbs, paprika, garlic powder, and cayenne pepper in a third bowl.
  8. Roll the chilled balls in the flour mixture, then dipping into the egg mixture, and lastly coating with the bread crumb mixture.
  9. Fry in batches for about 3-4 minutes or until golden brown.
  10. Drain on paper towel.
  11. Serve with your favorite dipping sauces.
