Thai Chicken Salad with Peanut Dressing
Description
The Thai Chicken Salad with Peanut Dressing centers on shredded chicken mixed into a bed of thinly sliced green and purple cabbage, cucumber slices, shredded carrots, and slivered almonds. This combination provides diverse textures from crisp vegetables and nutty crunch.
The dressing is a key component, made by blending peanut butter, rice vinegar, lime juice, neutral oil, honey, sugar, soy sauce, fresh ginger, garlic, cilantro, red pepper flakes, and salt into a smooth sauce. This produces a balance of creamy richness, bright acidity, gentle sweetness, umami from soy sauce, and a mild spicy note from the red pepper flakes.
When tossed together, the salad has a refreshing crunch combined with the savory and slightly spicy peanut dressing. It can be served as a light meal or complement to other dishes, offering an Asian-inspired flavor profile without complicated preparation.
