Ingredients
Thai Style Meatballs
- 1 lb. ground pork
- 1 lb. ground beef
- 4 stalks spring onions chopped
- 1 tsp. salt
- 1 tsp. garlic powder
- 1 tsp. ginger powder
- 3 medium Red Chili Peppers chopped, about 70g
- 2 tbsp. gluten free soy sauce
- ¼ cup Honeyville Almond Flour
- 1 ½ tbsp. olive oil for frying
- 1 ½ tbsp. sesame oil for frying
- 6 Tbsp. sesame seeds Optional - will add carbs
Sweet Chili Lime Sauce
- ⅓ cup Sugar Free Apricot Preserves
- ¼ cup water
- ¼ tsp. red pepper flakes
- 2 tbsp. lime juice
Instructions
- Mix all of the meatball ingredits (except oil) in a bowl until a sticky mixture is formed.
- Roll out meatballs to size of your choice. You should end up with 20-30 meatballs.
- In a cast iron skillet, heat oil to medium high heat. Once hot, add meatballs, but don't overcrowd pan.
- Cook for about 3-4 minutes on each size, flipping as needed and placing a lid over the pan.
- Combine all sauce ingredients in a pan and bring to rapid boil. Turn heat down and continue to stir every so often.
- Once all meatballs are cooked, add all pan drippings into sauce and stir in well.
- Optional: Roll meatballs in sesame seeds until fully covered.
