Ingredients

  • 2-3 garlic minced, cloves
  • 1/4 /4 cup soy sauce
  • 1 teaspoon ginger fresh
  • 1 Tablespoon honey
  • 1 Tablespoon rice vinegar
  • 3 Tablespoons peanut butter
  • 2 Tablespoons sesame oil
  • 2 Tablespoons vegetable oil flavorless
  • red pepper flakes optional, dash
  • 4 cups kale chopped, dino
  • 1 cup broccoli chopped
  • 2 carrot ribboned, medium
  • 1 red bell pepper thinly sliced
  • 1 cup snap peas chopped
  • 1/2 /2 cup green onions sliced
  • 1/2 /2 cup peanuts
  • 1/4 /4 cup cilantro chopped

Instructions

  1. Whisk together garlic, soy sauce, ginger, honey, rice vinegar, peanut butter, sesame oil, flavorless oil, and red pepper flakes.
  2. Toss together all the vegetables and toss with dressing. I start tossing the salad with about half of the salad dressing and add more according to taste.

Notes

  • Store any leftover dressing in an airtight container in the fridge for up to a week and a half.
