These Thai ground chicken lettuce cups are a super simple dinner that is packed full of flavor and perfect for a light summer dinner. Ground chicken mixed with ginger, lemongrass, fish sauce, soy sauce and sprinkled with chopped peanuts and lots of cilantro. You'll love these lettuce cups!

Ingredients
- 1 tablespoon olive oil
- 1 pound ground chicken
- 5 green onions thinly sliced
- 1 tablespoon grated lemongrass
- 1 tablespoon grated ginger
- 1 tablespoon grated garlic
- 1 tablespoon Chili garlic sauce
- 1/2 lime juiced
- 3 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 1 tablespoon fish sauce
- 2 teaspoons dark brown sugar
- 1/4 cup minced cilantro
- 2 tablespoons minced mint
- 1 head bibb lettuce outer leaves carefully removed, washed and pat dry
- 1/4 cup minced peanuts

Instructions
- In a large 12-inch skillet add olive oil and set over medium-high heat.
- Once the oil is hot add the ground chicken and cook for about 5 minutes to start browning the meat all while breaking up the meat with a spatula.
- Add in the green onions, grated lemongrass, grated ginger, grated garlic, and chili garlic sauce.
- Continue cooking until the meat no longer looks pink.
- In a small bowl whisk together lime juice, soy sauce, rice wine vinegar, fish sauce, and dark brown sugar.
- Pour into the meat mixture, stir to combine and cook just the mixture has thickened slightly.
- Remove from the heat and stir in the cilantro and mint.
- Place out your bibb lettuce leaves and fill each leaf with some of the ground chicken mixtures.
- Sprinkle the top with minced peanuts.
