Ingredients
FOR THE THAI PEANUT SAUCE
- ¼ cup peanut butter use ½ cup for more peanut flavor, creamy
- 2 tablespoons soy sauce
- 1 tablespoons rice wine vinegar
- 2 tablespoons chili-garlic sauce or use sriracha
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon lime juice
- 1 teaspoon garlic powder or use 1 clove garlic, finely minced or grated
- 1 teaspoon ground ginger or use 1 teaspoon fresh grated ginger
- 1 tablespoon water or more as needed for thinning, or stock
FOR THE THAI PEANUT NOODLES
- 8 ounces noodles use rice, flour, egg, ramen noodles, udon noodles
- 1-2 tablespoons sesame oil
- red pepper flakes garnish, crushed, fresh chopped, crumbled, or
- green onion
- peanuts
- sesame seeds
Instructions
FOR THE THAI PEANUT SAUCE
- Whisk all of the ingredients together, except for the water, in a small bowl until well combined and the sauce is nice and smooth.
- Add water a teaspoon at a time until you achieve your desired consistency.
FOR THE THAI PEANUT NOODLES
- Prepare the noodles in hot water per the packaging directions until done, about 4-5 minutes. Drain.
- Heat the sesame oil in a wok or large pan over medium heat and add the Thai peanut sauce. Stir and heat for 1 minute.
- Stir in the noodles and toss to evenly coat.
- Transfer to bowls. Garnish and serve.
