FOR THE THAI PEANUT SAUCE

  • ¼ cup peanut butter use ½ cup for more peanut flavor, creamy
  • 2 tablespoons soy sauce
  • 1 tablespoons rice wine vinegar
  • 2 tablespoons chili-garlic sauce or use sriracha
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon lime juice
  • 1 teaspoon garlic powder or use 1 clove garlic, finely minced or grated
  • 1 teaspoon ground ginger or use 1 teaspoon fresh grated ginger
  • 1 tablespoon water or more as needed for thinning, or stock

FOR THE THAI PEANUT NOODLES

  • 8 ounces noodles use rice, flour, egg, ramen noodles, udon noodles
  • 1-2 tablespoons sesame oil
  • red pepper flakes garnish, crushed, fresh chopped, crumbled, or
  • green onion
  • peanuts
  • sesame seeds

Instructions

FOR THE THAI PEANUT SAUCE

  1. Whisk all of the ingredients together, except for the water, in a small bowl until well combined and the sauce is nice and smooth.
  2. Add water a teaspoon at a time until you achieve your desired consistency.

FOR THE THAI PEANUT NOODLES

  1. Prepare the noodles in hot water per the packaging directions until done, about 4-5 minutes. Drain.
  2. Heat the sesame oil in a wok or large pan over medium heat and add the Thai peanut sauce. Stir and heat for 1 minute.
  3. Stir in the noodles and toss to evenly coat.
  4. Transfer to bowls. Garnish and serve.
