Description
This salad integrates fluffy cooked quinoa with a variety of fresh, crunchy vegetables such as shredded red cabbage, carrot, diced cucumber, edamame, and minced jalapeño for gentle heat. Aromatic herbs like cilantro and optionally Thai basil lift the flavor.
The dressing melds lime zest and juice with olive oil, tamari soy sauce, honey or maple syrup, grated fresh ginger, chili garlic sauce for spice, and fish sauce optionally for umami depth. Once combined, the salad can be served immediately or chilled for later, allowing the flavors to meld and the quinoa to absorb the dressing.
Peanuts can be added at serving time to provide additional texture and a toasty note that complements the other ingredients. This salad suits lunches, light dinners, or as a refreshing side dish for grilled or roasted proteins.

Salad
- 3 cups quinoa cooked
- 2 cups red cabbage shredded
- 1 cup carrot shredded
- 1 cup cucumber diced
- 1 cup edamame shelled
- 1 jalapeño minced
- 1/4 cup green onion sliced
- 1/4 cup cilantro chopped
- 1 tablespoon basil optional, Thai, chopped
- peanuts optional, but recommended, for topping the salad
Dressing
- lime zest
- 1/4 cup lime juice fresh
- 1 1/2 tablespoons olive oil
- 1 1/2 tablespoons tamari soy sauce low sodium
- 2 tablespoons honey or maple syrup
- 1 teaspoon ginger grated fresh
- 1 teaspoon Chili garlic sauce such as sambal oelek
- 1/2 teaspoon fish sauce optional, add more tamari if omitting
Instructions
- Combine all of the salad ingredients in a large serving bowl. Whisk together the dressing ingredients and pour over the salad. Stir everything together and serve immediately or cover and refrigerate until ready to serve. Serve the salad topped with peanuts if desired.
