  • 3 cups quinoa cooked
  • 2 cups red cabbage shredded
  • 1 cup carrot shredded
  • 1 cup cucumber diced
  • 1 cup edamame shelled
  • 1 jalapeño minced
  • 1/4 cup green onion sliced
  • 1/4 cup cilantro chopped
  • 1 tablespoon basil optional, Thai, chopped
  • peanuts optional, but recommended, for topping the salad

Dressing

  • lime zest
  • 1/4 cup lime juice fresh
  • 1 1/2 tablespoons olive oil
  • 1 1/2 tablespoons tamari soy sauce low sodium
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon ginger grated fresh
  • 1 teaspoon Chili garlic sauce such as sambal oelek
  • 1/2 teaspoon fish sauce optional, add more tamari if omitting

Instructions

  1. Combine all of the salad ingredients in a large serving bowl. Whisk together the dressing ingredients and pour over the salad. Stir everything together and serve immediately or cover and refrigerate until ready to serve. Serve the salad topped with peanuts if desired.
