Thanksgiving Leftover Sandwich

The ultimate Thanksgiving Leftover Sandwich with roasted turkey, stuffing, cranberry mayo, brussels sprouts and gravy all on thick slices of homemade bread. I mean, do we need to say any more?!

Ingredients

Servings
  • 4 lices white bread
  • 2-3 tbsp mayonnaise
  • 1-2 tbsp cranberry sauce to taste
  • leftover roast turkey
  • leftover stuffing
  • Brussels sprouts
  • gravy
  • crispy sage I simply fried sage leaves in hot oil for 30 seconds then drained on kitchen paper

Instructions

  1. Slice bread into thick slices.
  2. Mix together a few tablespoons of cranberry sauce with store-bought mayonnaise.
  3. Taste and adjust seasoning if necessary.
  4. You might need to add a pinch of salt or a squeeze of lemon juice.
  5. Add a dollop of the mayo the bread and spread using a knife.
  6. Add slices of the roast turkey and stuffing then pour over some leftover gravy.
  7. Add warmed leftover brussels sprouts and finish with crispy sage (optional).
  8. Add another slice of bread smeared with the cranberry mayo then serve.
  9. You could also toast the sandwich in a panini press or hot pan if you prefer.
