Thanksgiving Leftover Turkey Casserole

Ingredients

  • 3 cups stuffing divided, leftover prepared
  • 4 cups turkey about 1 lb, coarsely chopped leftover cooked
  • 3/4 cup Hellmann's® or Best Foods® Real Mayonnaise divided
  • 1/4 cup cranberry sauce whole berry
  • green chile optional, chopped, roasted
  • 2 cups mashed potatoes leftover
  • 1 cup mozzarella cheese shredded, part-skim

Instructions

  1. Preheat oven to 375 degrees F.
  2. Spray 8-inch. baking dish with no-stick cooking spray. Spoon in 1-1/2 cups stuffing, then top with turkey.
  3. Combine 1/4 cup mayonnaise with cranberry sauce; evenly spread over turkey.
  4. Combine chopped roasted green chile, if using with remaining 1/2 cup mayonnaise, potatoes and cheese in large bowl. Evenly spread on turkey, then top with remaining 1-1/2 cups stuffing.
  5. Bake 40 minutes or until heated through.
  6. Let stand 10 minutes before serving. Garnish, if desired, with dried cranberries.

Notes

  • This casserole can even be assembled on Thanksgiving Day as you are putting away all your leftovers. Then, on the day after Thanksgiving all you have to do is pull it out of your fridge and bake.
