Ingredients

For the Turkey Body

  • 1 pear halved vertically; red or brown, large
  • 2 cloves for the eyes
  • 1/2 pistachio shell for the beak
  • 2 sage for the feet, stems

Cheeses

  • 1 Brie cheese about 7 ounces, cut into wedges, small wheel
  • 5 ounces manchego cheese sliced
  • 6 ounces goat cheese I had an apple cinnamon flavored one, log
  • 5 ounces cheddar cheese cubed, sharp

Meats

  • 5 ounces prosciutto thinly sliced
  • 5 ounces salami thinly sliced, assorted

Fruits

  • 2 persimmon sliced into wedges
  • grapes large bunch, black
  • 4 figs quartered, or dried figs, fresh
  • 1/2 cup pomegranate seeds

Nuts

  • 1/4 cup pecans candied
  • 1/4 cup pistachio

Crackers

  • crackers assorted, for the 'feathers'
  • CRISPS assorted, for the 'feathers'

Accoutrements

  • jam served on the side, seasonally appropriate

Instructions

Create the Turkey Body

  1. Secure a halved pear in the center of your board to act as the turkey's body. Embed cloves for the eyes, attach a half pistachio shell for the beak, and place sage stems at the base for feet.

Arrange the Meats and Cheeses

  1. Drape thinly sliced prosciutto and assorted salamis around the pear to create ruffled feathers. Surround this setup with wedges of Brie, the log of goat cheese slices of Manchego, and cubes of cheddar cheese.

Add Fruits

  1. Place slices of persimmons, bunches of black grapes, and fig quarters (or dried figs) onto the board among the meats and cheeses, using these items to fill in gaps and add a burst of color and texture.

Set the Edges

  1. Place assorted crackers and crisps around the outer edges of the board to mimic expansive turkey feathers, ensuring these are easily accessible.

Fill Small Spaces

  1. Sprinkle pomegranate seeds, candied pecans, and pistachios in any small empty spaces.
