The Best Air Fryer Fries

The Best Air Fryer Fries recipe transforms russet potatoes into crispy, golden fries using avocado oil, kosher salt, and rosemary. The fries are hand-cut to a uniform thickness and air fried in a single layer for optimal crispness. An alternative oven method is provided for baking with parchment paper to prevent sticking. These fries feature a crunchy exterior and tender interior with a subtle herb seasoning, making them a great homemade side.

Description

Start by peeling and slicing russet potatoes into 3/8-inch thick fries. They are tossed with avocado oil allowing even coating, then seasoned with kosher salt and fresh rosemary to infuse an herby aroma. Care is taken to space fries evenly in the air fryer basket so hot air circulates and crisps each fry without steaming. The fries air fry at 400°F for about 20 minutes, with periodic shaking if layered, ensuring even browning and a crisp texture.

The result is fries with a crunchy outer layer and a soft, fluffy center. The rosemary seasoning adds a piney note that complements the potato’s natural flavor. Using avocado oil provides a subtle taste and high smoke point suited for air frying.

Oven baking is an alternative for larger batches, where the fries are laid in single rows on crumpled parchment paper to create raised spots that help fries crisp without sticking. Baking times and flipping mid-cook produce similarly crispy fries without deep frying.

For best results, potatoes must be thoroughly dried before frying to avoid sogginess. Spacing fries well in the basket or on the baking sheet encourages even crisping. Watching closely after 15 minutes prevents overcooking.

Ingredients

Servings
  • 4 russet potato medium
  • 1 TBS avocado oil
  • 1 tsp kosher salt
  • ½ tsp rosemary

Instructions

  1. Wash your potatoes in cool water.
  2. Thoroughly dry clean potatoes with a paper towel.
  3. Preheat air fryer to 400 degrees.
  4. Peel potatoes.
  5. Cut potatoes into 3/8 inch fries with a knife or fry cutter.
  6. Add the fries into a large bowl or plastic bag and toss with avocado oil until the fries are all completely coated.
  7. Season the top part of the fries with some of the salt and rosemary then toss the fries so the unseasoned fries are now on top. Season these fries with the remaining salt and rosemary and toss again.
  8. Place fries in the air fryer basket. The more space the fries have, the crispier they will get and the faster they will get there. The best way is to lay as many fries down in rows in a single layer with about a toothpick’s space between each fry.
  9. Air fry the fries at 400 degrees for about 20 minutes. Because every air fryer is different and several factors--such as humidity and fry size--can affect cook time, watch the fries carefully, especially after 15 minutes, and make adjustments as needed.
  10. After 20 minutes, pull out the fries, taste, and add more salt if needed. If some fries have not crisped up enough or you like extra crispy fries, flip or toss the fries around and continue to cook for 5-10 minutes more.
  11. Pull out fries, taste and add salt if necessary. Serve immediately with your favorite dipping sauce.

Notes

  • Thoroughly dry potatoes before frying to avoid soggy fries.
  • Space fries in a single layer for crispiness; if too many, cook in batches or use oven method.
  • Shake the air fryer basket every 5 minutes if fries aren’t in a single layer to ensure even cooking.
  • Oven method uses crumpled parchment paper to keep fries off the pan and prevent sticking.
  • Watch fries closely after 15 minutes cooking to avoid burning.
