Description
The Best Bacon Gravy starts by sautéing diced onion in olive oil until soft, then cooking diced bacon until crisp. Paprika is added to introduce a warm, smoky flavor. Cornstarch is stirred in to act as a thickener, and chicken broth is slowly incorporated and simmered to develop body.
Once thickened, the gravy is blended until smooth, producing a creamy consistency that coats dishes well. Salt and black pepper adjust the seasoning to taste. The finished gravy has a balance of smoky bacon taste and mild sweetness from onions, enhanced by the paprika’s warmth.

Ingredients
- 2 tablespoons olive oil
- 1 large onion diced
- 6 Bacon diced, slices
- 1 teaspoon paprika
- 1 tablespoon cornstarch
- 3 1/2 cups chicken broth
- salt
- black pepper
Instructions
- Heat olive oil in a large saucepan over medium-high heat. Add in onion and saute about 5 minutes. Add in bacon and saute another 5 minutes, stirring occasionally. Stir in paprika and let it heat for about 1 minute, just enough to release its flavor.
- Stir in cornstarch until no more white specks appear. Pour in chicken broth and heat to a simmer. Continue simmering 5 minutes and let liquid thicken.
- Pour all contents of the saucepan into a blender and blend until smooth. Season with salt and pepper to taste.
- Serve hot, or store in an airtight container and re-heat in a saucepan when ready to serve.
