The Best Baked Chicken Breast

The Best Baked Chicken Breast features bone-in, skin-on breasts seasoned and buttered beneath the skin for moistness and rich flavor. Baked at a high temperature, this method renders crispy skin and juicy meat with simple seasoning, ideal for an easy protein main course with a balance of savory and buttery notes.

Description

This baked chicken breast recipe uses bone-in, skin-on chicken breasts to help retain moisture during cooking. Softened butter is worked gently under the skin to coat the meat, contributing to juiciness and flavor. Olive oil and a generous amount of kosher salt and freshly ground black pepper season the exterior. Baking at 450°F cooks the chicken through in 50-60 minutes, producing a golden, crispy skin and tender meat. Resting the chicken before slicing lets juices redistribute, ensuring the meat remains moist.

Serving this chicken alongside vegetables or grains complements the rich flavor and satisfying texture of the skin and meat. Its simple seasoning makes it versatile for many meal contexts.

The recipe notes that the internal temperature should reach 165-170°F and juices run clear as doneness indicators. The chicken can be refrigerated for up to 4 days or frozen for 3 months, allowing for meal prep and storage flexibility.

Ingredients

Servings
  • 2 bone-in , skin-on chicken breasts
  • 2 tablespoons butter , at room temperature
  • 2-3 teaspoons extra-virgin olive oil
  • 3-4 teaspoons kosher salt
  • 1 teaspoon black pepper freshly ground

Instructions

  1. Preheat the oven to 450°F.
  2. Line a baking sheet with aluminum foil. Trim the chicken breasts of any extra fat tendrils and gently work your fingers under the skin and work half of the butter under the skin of each chicken breast, working it so spreads evenly. Drizzle each chicken breast with half of the olive oil and lightly pat so it evenly covers. Season each chicken breast with half of the kosher salt and black pepper.
  3. Bake in the oven for 50-60 minutes or until the internal temperature is 165-170°F and the juices run clear, then let rest for 5-10 minutes before slicing. Refrigerate for up to 4 days or freeze for 3 months.
