The BEST Corn Salad Recipe
Description
The BEST Corn Salad Recipe features sweet corn cooked briefly in browned butter to enhance its natural sweetness and add a nutty note. Cubed halloumi cheese is pan-seared until golden, lending a salty and chewy component that complements the corn. Fresh herbs like chives and cilantro provide a green freshness, while lime zest adds a citrusy brightness that lifts the overall flavor. Simple seasoning with salt and pepper enhances every ingredient.
The salad's texture comes from tender yet slightly crisp corn kernels paired with the firm texture of the seared halloumi. The butter coating adds richness without overpowering the fresh corn taste. This versatile salad works well as a side dish accompanying grilled meats or on its own as a light meal.
The recipe allows flexibility in ingredients, suggesting alternatives like canned or frozen corn and other cheeses such as cotija or ricotta salata if halloumi isn’t available. Adding the herbs and lime zest just before serving preserves the salad's fresh flavors. It keeps well refrigerated and can be served chilled or gently warmed for a cozy side.
Ingredients
- 4 ounces halloumi cheese
- 3 tablespoons butter unsalted
- 3 heaping cups sweet corn 3 to 4 cobs of corn
- 2 tablespoons chives thinly sliced
- 1 tablespoon cilantro minced
- salt to taste
- black pepper to taste
- lime optional, zest of 1
Instructions
- Place a large skillet over medium-high heat. Once skillet is hot, add halloumi and sear on each side for 2 to 3 minutes, or until browned. Remove from heat and cube into bite sized pieces.
- Lower heat to medium heat and add butter. Allow butter to melt and toast until lightly browned, 4 to 5 minutes. Add corn and toss together. Saute for 1 to 2 minutes. Season with salt and pepper.
- Remove from heat and stir in chives and cilantro.
- Fold in cubed halloumi. Finish with fresh lime zest, if using. Serve warm or room temperature.
Notes
- This salad can be prepared up to 3 days in advance; add herbs and lime zest just before serving for fresh flavor.
- Frozen or canned corn can substitute fresh corn when necessary, though fresh corn is preferred for the best texture.
- If halloumi is unavailable, cheeses like cotija or ricotta salata work well and can be crumbled rather than seared.
- Green onions may replace chives as a garnish if needed.
