Ingredients
- 4 TBS butter plus more for casserole dish, unsalted
- 3 lices white bread crusts removed, chopped into ¼- to l/2-inch pieces
- 2 milk ¾ cups
- ¼ cup all-purpose flour
- 1 teaspoon salt plus more for water, coarse
- ⅛ teaspoon ground nutmeg
- ⅛ teaspoon black pepper freshly ground
- ⅛ teaspoon cayenne pepper
- 2 ¼ White Cheddar Cheese grated, sharp
- 1 cup gruyere cheese or ⅔ cups grated Pecorino Romano cheese, grated
- ½ pound elbow macaroni or other spiral noodle
