The Best Ever Baked Oatmeal

The Best Ever Baked Oatmeal combines quick oats with a sweet custard made from eggs, milk, oil, sugar, and vanilla, baked until set and golden. Topped with chocolate chips, coconut, almonds, hemp hearts, and chia seeds, it offers a hearty and textured warm breakfast. The baking process creates a soft yet structured oatmeal dish that can be cut into squares and served with milk or cream, providing a filling and wholesome start to the day.

Description

This baked oatmeal uses quick oats mixed with sugar, baking powder, and salt as the dry base. The wet ingredients include eggs, milk, oil, and vanilla extract, which are combined and poured over the oats before baking. The dish is baked until the top is golden and the oatmeal has set.

Chocolate chips are added immediately after baking to gently melt into the warm surface. Toasted coconut, sliced almonds, hemp hearts, and chia seeds are sprinkled over the top to add flavor and texture contrasts. The final product has a firm but tender consistency and a mildly sweet and nutty flavor.

Served warm with an optional drizzle of milk or cream, this baked oatmeal works well for breakfast or brunch as a nourishing dish. It offers a convenient way to enjoy oats in a hands-off cooked format with added toppings for variety.

Ingredients

Servings
  • 4 1/2 cups quick oats
  • 3/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 egg large
  • 2 cups milk whatever you like! dairy or nondairy
  • 3/4 cup canola oil
  • 2 teaspoons vanilla extract
  • 1/4 cup chocolate chips
  • 1/3 cup almonds sliced
  • 1/3 cup coconut toasted if you've like!, flaked
  • 2 tablespoons hemp hearts
  • 1 tablespoon chia seeds
  • milk for drizzling, or cream

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 9x13 inch baking dish with nonstick spray.
  2. In a large bowl, whisk together the oats, sugar, baking powder and salt. In a smaller bowl, whisk together the eggs, milk, oil and vanilla extract. Add the wet ingredients to the dry and stir until combined. Pour the mixture in the dish.
  3. Bake for 35 to 40 minutes, or until the top is golden brown and set. Remove the dish from the oven and place the chocolate chips on top right away (so they kind of melt!). Top with the coconut, almonds, hemp hearts and chia seeds. Let cool slightly, then cut into squares and serve with a drizzle of milk or cream.
