The Best Grilled Cheese of Your Life
Description
The recipe builds the sandwich from 8 slices of challah bread, each generously buttered on one side, and filled with thick-cut sharp cheddar slices, cooked bacon strips, and shredded cheese both inside and on top. The sandwich is first cooked butter-side down with cheese melting inside, then flipped onto melted butter on the other side to develop a crisp crust while allowing the cheeses to melt together.
The technique of flipping the sandwich multiple times with additional butter and cheese added to the exterior creates a crunchy exterior with a gooey, cheesy interior and smoky bacon flavor throughout. Medium-low heat ensures the bread crisps slowly without burning and the cheeses melt thoroughly.
These sandwiches serve four and deliver a rich, indulgent breakfast or lunch option. Keeping finished sandwiches warm in an oven using a cooling rack on a baking sheet prevents sogginess while maintaining crispness if preparing for guests or family.
Ingredients
- 8 lices challah bread
- 4-6 tablespoons butter at least
- 8 thick cheddar cheese or more, sharp, sliced
- 8 lices Bacon cooked
- 1 + cup cheese shredded
Instructions
- Slice the challah bread into 1/2 or 3/4 inch slices. You will need 8 slices of bread (for 4 sandwiches).
- In a wide nonstick skillet, heat about 2 tablespoons of butter over medium low heat until melted. Add 2 slices of bread to the butter in the pan. Make sure you get butter on the bottom of each slice of bread.
- Add 2 thick slices of cheese to one piece of bread. Or add more, I'm no judge.
- Place the other slice of bread, butter side up, on top of the cheese.
- Add 2 strips of cooked bacon on top of the sandwich.
- Sprinkle about 2 tablespoons of shredded cheese on top of the bacon.
- Melt another 1/2 tablespoon butter in the pan, off to the side. Carefully flip the sandwich over onto the melted butter, so that the cheese and bacon are on the bottom of the pan. Cook on medium low for 3-4 minutes until crispy and grilled.
- Add another 2 tablespoons of cheese to the top of the sandwich. Flip so that the cheese is on the bottom, and cook until crispy, another 3-4 minutes.
- Repeat with remaining bread, cheese, bacon, and butter until all 4 sandwiches are done. When each sandwich is finished, put it on a cooling rack in the oven, so that the bottom stays crispy! (see note)
Notes
- You can use any cheese that melts well; this recipe mixes sharp cheddar slices inside with shredded Monterey Jack or white cheddar on top.
- When preparing multiple sandwiches, store finished ones in a 170°F oven on a wire rack over a baking sheet to keep them warm and maintain crisp bottoms.
- Using challah bread provides a soft, slightly sweet base that browns evenly, but other thick-sliced breads may also be used.
