The Best Ground Chicken Burgers
Description
The Best Ground Chicken Burgers use ground chicken mixed with mayonnaise, lemon juice, seasoned breadcrumbs, fresh oregano, chives, garlic, salt, and pepper to create juicy and flavorful patties. The use of mayonnaise helps retain moisture in the lean ground chicken, while the herbs and garlic add brightness and savory notes.
Burgers are shaped with a thumb indentation in the center to promote even cooking and grilled over medium-high heat until the internal temperature reaches 165°F, ensuring safety and optimal juiciness. The burger sauce combines mayonnaise, lemon juice, Dijon mustard, smoked paprika, salt, and pepper for a creamy and slightly smoky complement.
These chicken burgers can be served on toasted buns with fresh butter lettuce, tomato, avocado, and red onion for a balanced and satisfying meal that highlights the flavorful patty and sauce. Proper temperature monitoring prevents dryness and preserves tenderness.
An instant-read thermometer is recommended to check doneness. Overcooking may dry the chicken burgers, so careful timing based on patty thickness and grill heat is important. This recipe appears in a cookbook chapter focusing on everyday essentials.
Ingredients
Burger sauce:
- 1 cup mayonnaise
- 2 teaspoons lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon smoked paprika
- salt to taste
- black pepper to taste
Burgers:
- 1 pound ground chicken
- 2 tablespoons mayonnaise
- lemon juice of half
- 1/2 cup Italian seasoned breadcrumbs
- 2 tablespoons oregano fresh, chopped
- 1 tablespoon chives chopped fresh
- 1 garlic minced, large clove
- salt to taste
- black pepper to taste
For serving:
- hamburger buns optional, to taste
- butter lettuce
- tomato
- avocado
- red onion
Instructions
- Stir the burger sauce ingredients together in a medium bowl. Taste and adjust as needed.
- Oil and preheat your grill to medium-high heat.
- In a medium-to-large bowl, add the burger ingredients. Using your hands, gently mix everything together, taking care to not over handle the mixture.
- Form burger patties one by one and place them on a sheet of wax paper. You should be able to make six average-size burger patties or four larger ones. Using your thumb, create a depression in the center of each patty so they cook evenly.
- Cook the burger patties until their internal temperature is at least 165F. Cooking time really depends on your grill and the thickness of the patties. Mine generally take 5 minutes on the first side and 4 minutes on the second side (gas BBQ).
- Once the burgers are cooked, you can toast the buns on the grill for about 30 seconds if desired.
- Assemble burgers by spreading the sauce onto each bun and adding the burger patties and toppings.
Notes
- Check chicken burgers' internal temperature with an instant-read thermometer to ensure they reach 165°F for safe consumption.
- Avoid overcooking to maintain moist, tender burgers; typically cook 5 minutes on the first side and 4 on the second.
- Buns can be toasted on the grill for about 30 seconds after cooking the patties if desired.
- This recipe is also included in the Salt & Lavender: Everyday Essentials cookbook, chapter 7.
