The Best Ham Glaze (Easy)

This ham glaze combines brown sugar, orange or pineapple juice, Dijon mustard, garlic powder, and ground cloves to create a sweet and tangy coating for spiral cut or scored ham. Brushed on near the end of baking, then optionally caramelized under the broiler, it forms a flavorful crust that enhances the ham’s natural savory notes.

Description

The Best Ham Glaze (Easy) is prepared by whisking together brown sugar, citrus juice (orange or pineapple), Dijon or grainy mustard, garlic powder, and a pinch of ground cloves. This mixture provides a balance of sweetness, acidity, and spice to complement the ham. Applying the glaze to a spiral cut or scored ham about 20–30 minutes before baking completes adds a glossy, caramelized finish.

If the ham is not spiral cut, scoring the surface in a diamond pattern before applying the glaze allows the flavors to penetrate into the meat. After the glaze is applied and the ham finishes cooking to a safe internal temperature, an optional second glaze can be brushed on with a brief broil to intensify caramelization and deepen color.

The glaze can be refrigerated in an airtight container for up to four days and stirred before reuse. This recipe is straightforward and enhances the ham's flavor with minimal ingredients and effort.

Ingredients

Servings
  • cup brown sugar
  • ¼ cup orange juice or pineapple juice
  • 2-3 tablespoons Dijon mustard or grainy mustard
  • ½ teaspoon garlic powder
  • 1 pinch cloves ground

Instructions

  1. In a small bowl, whisk all ingredients together.
  2. Brush over a spiral cut or scored ham (see notes) about 20-30 minutes before the ham is done or when the ham reaches 115 to 120°F. Continue baking according to your recipe or until the ham reaches 138°F.
  3. If desired, brush a second glaze overtop once the ham is done cooking and broil for 3 to 4 minutes to caramelize the glaze.
  4. Remove from the oven and let the ham rest for at least 15 minutes before serving.

Notes

  • Score non-spiral cut ham in a diamond pattern to help glaze penetrate the meat.
  • Apply glaze 20-30 minutes before ham reaches 115–120°F and continue baking until 138°F internal temperature.
  • A second glaze and broiling for 3-4 minutes intensifies caramelization and color.
  • Store unused glaze in airtight container in refrigerator for up to 4 days; stir before reuse.
