The Best Harvest Stuffed Sweet Potatoes

These harvest stuffed sweet potatoes are simply the best! Cozy, deliciously spiced-sweet cool weather flavors, this recipe for stuffed sweet potatoes is so easy to make and ready to go in no time at all.

Ingredients

Servings
  • 4 sweet potato
  • 2 tbsp olive oil
  • 1 small red onion diced
  • 1 lb ground chicken or ground turkey
  • 1 tsp garlic powder
  • 2 tsp Italian seasoning
  • salt to taste
  • black pepper to taste
  • 1 large apple chopped, honey crisp
  • 1 cup dried cranberries
  • 3 handful kale chopped
  • ½ cup pepper jack cheese shredded
  • green onions chopped, for garnish

Instructions

  1. Poke holes in the sweet potatoes with a fork, and then microwave for 10-15 minutes. (See notes for oven baked sweet potatoes)
  2. Cook onion over medium heat with olive oil for 4-5 minutes, until soft and fragrant.
  3. Add in ground chicken and spices; breaking apart and cooking until browned.
  4. Mix in apples, dried cranberries, and chopped kale. Continue cooking about 10 more minutes.
  5. Make a slit in the sweet potatoes and fill with the chicken and apple mixture. Sprinkle over pepper jack cheese and place under the broiler for 2-3 minutes, until cheese is melted. Garnish with green onions and serve.

Notes

  • For sweet potatoes in the oven: Preheat oven to 400 degrees. Poke holes in the sweet potatoes with a fork and wrap in tin foil. Bake for 1 hour.
