The Best Hummus (in 3 Minutes!)

This hummus recipe uses canned chickpeas blended with tahini, olive oil, lemon juice, garlic, and cumin to create a creamy and smooth spread. The reserved chickpea liquid, known as aquafaba, helps achieve the desired soft texture. Garnishing with paprika, olive oil, and fresh parsley adds color and mild flavor. Its quick preparation makes it a practical choice for homemade hummus.

Description

The process involves blending canned chickpeas with tahini, olive oil, fresh lemon juice, garlic cloves, cumin, kosher salt, and some of the reserved chickpea liquid. A high-powered blender facilitates creating a smooth, creamy consistency in about three minutes. Adding chickpea liquid adjusts the texture to individual preference, ensuring softness without diluting flavor.

The recipe concludes with decorative garnishes: a drizzle of extra-virgin olive oil, a sprinkle of paprika, and chopped fresh parsley, which contribute visual appeal and subtle flavor nuances. The combination of tahini's nutty richness, lemon's brightness, and garlic's pungency makes the hummus versatile for use as a dip, spread, or sandwich accompaniment.

Additional advice notes that homemade tahini can be made separately for use in this recipe. The recipe also references the use of a Vitamix Ascent 3500 blender for best results, though other strong blenders are suitable. It mentions the equivalency of dried and canned chickpeas, assisting those preparing chickpeas from scratch.

Ingredients

Servings
  • 2 (15-ounce cans) chickpeas drained with liquid reserved
  • cup chickpea liquid or more, as needed
  • ½ cup tahini
  • ¼ cup olive oil
  • 2 lemon juiced, plural
  • 2 garlic cloves
  • 1 teaspoon cumin
  • ½ teaspoon kosher salt

For Garnish

  • extra-virgin olive oil
  • paprika
  • parsley freshly chopped

Instructions

  1. Add all the ingredients to a high-powered blender and secure the lid. Remove the lid cap and insert the tamper.
  2. Turn the blender on high for 30 seconds (or more for a creamier texture) and use the tamper to push the hummus into the blades. Add more chickpea liquid (aquafaba), if desired, for a softer hummus.
  3. Add the hummus to a small serving bowl and garnish with olive oil, paprika and fresh parsley.

Notes

  • You can make your own tahini instead of buying it for a fresher taste.
  • Use a high-powered blender like a Vitamix for the smoothest texture.
  • One cup of dried chickpeas equals about 30 ounces canned after soaking and cooking.
