The Best London Broil Recipe
Description
The Best London Broil Recipe uses a marinade combining soy sauce, Worcestershire, olive oil, lemon juice and zest, garlic, Italian seasoning, smoked paprika, and spices to infuse the meat with layered umami and brightness. Marinating for a minimum of 2 hours, ideally up to 12, allows the meat to absorb these flavors deeply and start tenderizing.
The beef is cooked under a medium broiler or on a grill to an internal temperature between 135-140°F, yielding a medium rare to medium doneness with a slightly charred exterior. This method keeps the roast tender and juicy without overcooking, which can lead to toughness in such cuts.
After cooking, resting the meat for 5-7 minutes preserves the juices before slicing thinly against the grain. The final dish offers robust flavor with a firm but not chewy texture, suitable for serving as a hearty main course or slicing for sandwiches.
Using a thermometer during cooking is essential to reach the ideal doneness and maintain tenderness. Marinate as long as possible when time allows to maximize flavor development.
Ingredients
- 1/2 cup olive oil
- 1/3 cup soy sauce low sodium is fine
- 1/4 cup Worcestershire sauce
- 1/4 cup lemon juice
- 1/2 teaspoon lemon zest
- 1 tablespoon garlic minced
- 1 tablespoon Italian seasoning dried
- 1/2 teaspoon red pepper flakes optional, crushed
- 1 teaspoon black pepper
- 1/2 teaspoon kosher salt
- 1/2 teaspoon onion powder
- 1 teaspoon smoked paprika
- 2 pounds london broil roast such as top round or sirloin
- 2 tablespoons parsley chopped, fresh
Instructions
- Place the olive oil, soy sauce, Worcestershire sauce, lemon juice, lemon zest, garlic, Italian seasoning, red pepper flakes, black pepper, salt, onion powder and smoked paprika in a bowl or in a resealable gallon sized freezer bag. Whisk to combine.
- Add the meat to the marinade. Marinate the meat for at least 2 hours, or up to 24 hours.
- BROILER DIRECTIONS: Preheat the broiler to medium (450 degrees F). Place the meat on a sheet pan coated with cooking spray. Broil for approximately 7 minutes per side, or until a thermometer inserted into the thickest part of the meat registers 135-140 degrees F. The cook time may vary depending on the thickness of your meat.
- GRILL DIRECTIONS: Preheat a grill or grill pan to medium-high heat. Add the meat and cook for approximately 7-8 minutes per side, or until a thermometer inserted into the thickest part of the meat registers 135-140 degrees F. The cook time may vary depending on the thickness of your meat.
- Let the meat rest for 5-7 minutes. Thinly slice the meat, then sprinkle with parsley and serve.
Notes
- Marinate the meat for at least 2 hours and preferably up to 12 hours for deeper flavor and tenderness.
- Use a meat thermometer to ensure the roast reaches 135-140°F internal temperature without overcooking.
- Allow meat to rest 5-7 minutes after cooking to retain its juices before slicing.
- Slicing against the grain helps keep the meat tender when serving.
