Ingredients

  • 2 tbsp. olive oil
  • 1 yellow onion diced, medium
  • 6 - 8 garlic minced, cloves
  • 10 oz. cremini mushrooms sliced
  • 1 ½ tbsp. vegetable stock paste Better Than Bouillon brand
  • 3 cups water
  • 1 tsp. salt
  • 1 tsp. black pepper cracked
  • 1 tsp. chili flakes
  • 300 g fusilli pasta dry
  • 1 Parmesan Cheese 1 ¼ cup
  • 1/3 cup half-and-half

Instructions

  1. Add the olive oil, garlic, onions, and mushrooms into a large sized pot over medium-high heat. 
  2. Cook until lightly golden, fragrant, and most of the water evaporates, about 6 – 8 minutes.
  3. Add all of the remaining ingredients to the pot.
  4. Continue to cook and stir the pasta every 3 – 4 minutes to help the ingredients combine and prevent sticking.
  5. Continue to cook for 20 – 25 minutes until pasta is tender, absorbs most of the liquid and flavors combine. 
  6. Adjust seasoning to taste. 
  7. Serve immediately with sprinkled red chili flakes and slices of toasted baguette.
